The Manyara Shiraz is sourced from a cool climate site in the Adelaide Hills. Carefully picked in the cool of the morning and transported to the winery. De-stemmed whole berries where fermented in a small batch fermenter and hand plunged. The wine was then basket pressed to 30% new French Oak barrels and left to mature for 15 months. The Manyara Shiraz is dark red in colour with generous full flavours of dark cherries and plum fruit balanced with a peppery spice. Fine tannin structure and a hint of subtle oak add to make Manyara Shiraz a complex wine with a structured finish.
